Arindam: -We are going to Chand…wow, we are going to moon…what a real surprise for us?

Sain Director: -abbey buddhuram, hum log Chand pe nahi, Chad pe jaah rahe hai…Chad is the name of an African country. Alain Llorca of Chad is one my best friends. Alain has invited me to celebrate his son’s first birthday party. So, that is why we are going there and to do the next episode of our special program “Foods”.

***************

Arindam: -Hello viewers. Today, you are watching the 11th episode of our program “Foods”. In this episode, as you can see we have just landed at the N’djamena city airport. We are going to stay at the Kempinski hotel, where Mr. Llorca will cook some foods in front of our camera. So, you people just follow me.

***************

Llorca: -Welcome to Chad, my dear friend. So, I hope that till now, you have not faced any problem, while coming here.

Sain Director:- No, not at all. But, you promised something to me. Do you remember that?

Llorca: -Ya ya, sure! Today, I will cook a dish on fish. Let us start the program now.

Arindam: -Wow, you people also like to eat fishes. That is really great.

Llorca:- But these are dried fishes. The name of these fishes is Capitaine fish.

Arindam: -But, there is no sea or ocean here. From where do you get these fishes?

Llorca: -These are the famous fishes of our Lake Chad.

Arindam:- Ok, please tell us about the ingredients that you have taken.

Llorca:-6 small pieces of dried Capitaine fish, 1 teaspoon of turmeric powder, half spoon chili powder, half teaspoon butter, 1 tea cup of mustard oil, half cup of mustard seeds and half spoon of salt.

Arindam: -Tell me one thing, for how many days, have you dried these fish pieces?

Llorca:- Well, we have kept those pieces under the sun for at least 3 days. The smell of these dried fishes is really good, you see. Now, I will mix the fish pieces with the butter and chili powder. Then just put those fishes in the hot pan for 2 minutes. Now, pour the mustard oil, mustard seeds, turmeric powder and salt.

Arindam:- So, it is basically a fish fry.

Llorca: -But, it is of different type. We will fry it till it becomes dark brown in color and crispy in nature. The taste of the dried Capitaine fish fry is such that, if you add some butter to it, it adds a different flavor altogether. Now. Let me serve it in a plate with some salads. This is one of the special fish dishes in Chad.

Arindam:- Wow, the taste is really awesome. But, the size of these fish pieces is very big.

Llorca: -of course, why not; after all these fishes enters the lakes of Central Africa from River Nile only. Let me tell you one thing that, the Capitaine fishes of Lake Victoria are the tastier ones. Lake Victoria is in Uganda.

Arindam: -Hmm... I think; I should visit Uganda also. Anyway, Mr. Llorca thanks a lot for your time with us. Bye.

FOODS (EPISODE - 10)

Arindam: -Hello viewers. Can you guess where we are at present? Well, we are just standing in front of the Santiago Airport in Cuba. Actually, Guillermo, the famous Cuban boxer is a very good friend of our Sain Director. Guillermo invited him and this Director has landed on Cuban soil with his entire team. The city is not bad at all. Oh, there is Guillermo, calling us to get inside his car.

Guillermo: -Welcome to Cuba. I hope you have not faced any problem till now.

Sain Director: -Not at all, Guillermo. It’s a pleasure to visit Cuba. Hey, where are we going to stay tonight?

Guillermo: -There are many cottages available here, which are very cheap and the local people will take care of all the hospitalities. There are good hotels also. But, after all you are my friend and that too from the great land of India. Buddy, you all are going to stay in my own guest house. How is Vijender, the Indian Boxer? That guy is really a good boxer. Hardly, I have seen such a tough Indian boxer for a long time.

Sain Director:- Hmm… maybe, Akhil is a good boxer. Hey, what is that? Wow, the Cathedral really looks great.

Guillermo: -Ya, ya, that is the main Cathedral of this city Santiago de Cuba. The dead body of the founder of this city has been kept inside that Cathedral. His name was Diego Vallazquez Cueller. You will love to tour this country, as there are valleys, mountains and rivers and don’t forget to experience the sunset from the peaks of Sierra Mestra. Also, regarding your “FOODS” program, I will also cook a special Cuban dessert in front of the camera. I am sure, you will like that cake.

********************

Arindam: -So viewers, we are now in the kitchen of Guillermo and he is going to teach how to make a Cuban dessert. Hey, Guillermo, can you please tell us about the ingredients that you have taken for cooking it?

Guillermo: -of course, why not? 1 bar of butter, 1 full teacup of sugar, 2 eggs, 1 teaspoon vanilla paste, 2 cups of flour mixed with water, 2 teaspoon baking powder, 1 teaspoon salt, and 1 bar of special (Goya Brand) Guava paste of Cuba. You can also crush guava into several small pieces, instead of using the Guava paste.

Arindam: -Babah, I have never seen, that guava is also used to make a sweet cake. Anyway, after all, this is Cuba. Here, people love to eat guava. Even in San Francisco or Washington, you will find bakery shops, where Cuban cakes or desserts made of Guava are in demand. Ok, Guillermo, please proceed to the next step.

Guillermo: -Take a large pan. Add the butter and heat it for 2 minutes. Then add the half cup of sugar in it and again after 3 minutes add the remaining sugar to it and let it heat for 2 minutes. Now break the 2 eggs and add it. Pour the Vanilla paste, flour and baking powder in the pan after 4 minutes. Heat the pan for 2 minutes. You will get a sweet paste.

Arindam: -Oh! Now you are taking out that paste in your palm and putting those guava pastes on it. It is like a sandwich, where guava pastes have been kept in between the sweet paste. Hmm… so, there are at least 5 cake pieces.

Guillermo: -Wait, I have not finished it yet. I will now put it inside the baking machine of our guest house kitchen and then after 1 hour, we will take it out and cool it for 20 minutes. Then we will cut each big piece into four parts. So, all total, you will get 20 small cakes. The temperature of that baking machine is at least 147 degree Celsius.

Arindam: -Wow, the taste is awesome! Who will say it is made of Guava paste. Thanks Guillermo. Bye Viewers.

FOODS (EPISODE - 09)

Arindam: -Hello viewers, don’t be surprised be seeing these tribal people in my background. Do you know where I am? I am in a forest of South Eastern New Zealand.

Ryann: -hooaaa …, I am the guide of this forest…welcome to this New Zealand forest.

Arindam: -Uff, Ryann, please control yourself. Viewers, Ryann will guide us through this forest. I am really afraid of these tribal people. Baapre baap, they look so dangerous. Hey, Ryann, what is the name of this tribe?

Ryann:- This tribe is the famous Maori tribe. Hey, you come here. Sir, this is Danume. He will take us to the place, where cooking will take place.

Arindam: -Viewers, actually, someone invited our Sain Director for a Maori feast. So, he planned to do a program on it. Really, as an anchor, I am just exploring around the world, eating different types of foods.

***************

Ryann:- Look here, this is the place where they have digged a big hole in the ground only.

Danume:- Ya, now, we will use these rocks. These rocks are known as Auckland Blue found in Dargaville regions of Auckland. These rocks are blackish-blue in color and is a type of igneous rocks.

Arindam:- I am not getting any head or tail about this. These tribal people are going to cook food using rocks and that too on the ground. Oh! No, they have created a big hole there, and kept those rocks and timber wood. The timber woods have been kept layer by layer, the lighter ones at the bottom and the hard one at the top. Arrey, what are they doing now? Hey, what are these wet sacks for?

Ryann: -These wet sacks will be covered on the hole. It will work like the lid of a pressure cooker. See, the mechanism is very simple. We have used the rocks as the oven, timbers as the source of fire from which the oven will get heated. We created a hole, where the food baskets will be placed.

Arindam: -in our Indian villages, we have chulaas, where we cook food by using woods only. Now, what is so funny about this kind of cooking?

Danume: -Look at the hole there. We have added ashes there. Now, when you will lit up fire, within half an hour, a steam will get generated in that hole, which gives a different taste to the cooked foods.

Ryann:- Now, what are you going to cook, today, Danume?

Danume:- We will cook the roasted lamb. See, in this process, cooking takes time, at least 2.5 to 3 hours. So, we, the Maori tribal people always make all the recipe preparation the previous night and keep it in a food basket. That food basket is kept in another hole, where heated rocks and timbers are also kept. That helps in keeping the recipe hot. The next morning, that is today, we will now put that food basket inside that hole, covered with wet sacks. Now, burn the timber. See, we have lit up the fire. Let it be like that for 2.5 hours. After every 1 hour, we will change the sacks and the content of ashes in the hole.

Arindam: -Babah, yeh log khana pakaa raha hai ki… foods ka chitaah jwalaa raha hai…aise laag raha hai, jaise koi mar gaya hai…usko jwalaa diya…oh! The roasted lamb is cooked. Wow, really this roasted lamb is very tasty and yes, due to this chulaah, there is a different steamy wooden smell added to this food. But, believe me; this kind of preparation is invented only by these Maori tribes. They are of the opinion that, it is the healthiest way of cooking meats. Hardly, many people are aware of this special chulaah. Ok, let me eat. See you later. Bye.

FOODS (EPISODE - 08)

Arindam: -Hello viewers, can you guess, where are we? You will be surprised to know that in England, every year; Asian people conduct one of the largest fairs of Europe, popularly known as “London Mela”. This place is known as Gannesbury Park, situated in West London. It is so chilled out here. Ok, without wasting any time, let us go inside the Park, to have a glimpse of this fair.

**********************

Arindam: -Wow! it is just amazing man. Can you believe it? I am feeling as if I am in India only. You can hear that majority of people are speaking in Hindi only. There are many mongoloid people also, of which Chinese, Vietnamese and Singapore comprises the majority. Oh! Pakistanis have also given a big food stall here.

Sain Director: -Hey, Arindam, do one thing. We have never done a program on Pakistani foods. Go and see what kind of foods are there in that foods stall.

Arindam: -See the fun, I never dreamt in my wildest dream that I have to anchor a program on Pakistani foods, after all they are our arch-rivals. Hello, boss, what is your name? Naam kya hai aap ka?

Hussain: -Inshallah…aap pehla customer ho, jisne hindi mein yeh sawal kiya...yahaan jitney bhi Asian log rahetey hai…English mein sawal poochte hai…aap Rawalpindi se ho kya? My name is Firdaus Hussain.

Arindam:- No, I am not from any Pindi…I am from India and you are my arch-rival. Anyway, tell me what is this food item that you are selling here?

Hussain: -Here in London, there are only two communities; either you are Asian or non-Asian. In this city, Indian, Pakistani, Chinese, Japanese and other Asian people are like brothers and live with unity. At least in London, you are not my arch-rival. Coming to your question, this food item is known as Saffron Rice.

Arindam: -My goodness, Saffron color exists in Pakistan also, BJP supporters will be very happy to taste this Saffron rice. Can you please cook one plate of saffron rice, in front of our camera? Please also tell the ingredients and procedures for cooking it.

Hussain: -Take 2 small cups of basmati rice, 2 teaspoon of butter, 3 teaspoon of sugar, some pieces of Cashew nuts, 1 small spoon of pista badam cream, half glass milk and 1 small spoon of saffron spice. This saffron spice that we have used here is of Kashmir. Kashmiri saffron spice is world famous. We get this spice from the dried stigma of saffron flower only.

Arindam: -I am hearing for the first time in my life that there is any spice, which is called saffron. I only knew that saffron means Hindutva…he he he ….anyway, jokes apart, please carry on with your cooking.

Hussain: -We, the Pakistanis are always cautious about that Hindutva saffron color, which you have mentioned just now, he he he …Ok, jokes apart. Let me proceed with it. First I will wash, soak and drain the rice. Now, I am heating half the butter and the rice. Add one and a half times the quantity of water and let it cook in the oven. When three-fourths of rice is cooked, add sugar and the remaining butter, pista badam cream and saffron mixed in the half glass of milk. Cook it in the oven for 10 minutes. Fry the cashew nuts in a separate oven. Add those fried cashew nuts to the rice. Now, the saffron rice has been cooked. Just taste it.

Arindam: -I thought it will taste like Pulao only, but, no, this saffron spice and the pista badam cream have a different kind of taste. Hmm…I liked this saffron rice, but this butter and cashew nuts makes this food item very heavy and rich. You cannot eat too much. Suhanallah, Hussain miyaan, kya khana banaya aapne…Thanks a lot for telling us about this saffron rice. Viewers, let me enjoy this London Mela now. See you later, again. Goodbye.

FOODS (EPISODE - 07)

Arindam: -Hello viewers! Today, I am at the kitchen of the famous Park Hyatt Restaurant of Tokyo, Japan. Basically, I am with my sweet friend Sumitra Roy, who is now Sumitra Imajuko after getting married to Hiroyuki Imajuko, a businessman. But, Sumitra has not changed her career. She was a chef in the Park Hotel of Kolkata and now after marriage, she is in this restaurant.

Sumitra: -Arindam, Thanks a lot for coming here, to celebrate my 1st marriage anniversary. I hope you enjoyed the party last night.

Arindam: -of course, but the party was of a different kind, some things look awkward to me, after all, those are Japanese traditions. But, I liked the Domburi rice with the Yakizakana curry. The taste was just awesome. The chefs who have cooked those foods are doing the summer internship under you only. So, Sain Director requested me to do one episode of “Foods” program with you. Do you still remember how to cook Indian dishes or fish curries? Or, you have forgotten all those Indian recipes.

Sumitra: -Arindam, as a cook, if you learn one recipe, you will never forget that in your life. It is like learning swimming or cycling. Ok, today, you want me to cook some dishes on fish?

Arindam:- Yes, please proceed. But, do you get Indian fishes here?

Sumitra: -He he he … no, not at all. Today, I will cook an item of Dog Shark fish. 500 grams of fish will be enough for you, me and my hubby Hiroyuki.

Arindam: -Ok, but viewers want to know about the other ingredients that you have taken.

Sumitra: -2 eggs, 1/2 teaspoon black pepper, 1 green chili, a small piece of ginger, 1 onion, half teaspoon turmeric powder, 1 teaspoon red chili powder. Oh! Also the mustard oil for frying it.

Arindam: -Now, I know, what you will do, as usual. You will fry the Dog Shark fish and keep it aside.

Sumitra: -If you know it, then come and cook the food.

Arindam:- Aah, Sumitra, why are you getting angry. After all, giving lecture is easy but cooking food is a nightmare for me. At least, that is not my department. Ok, what is the next step?

Sumitra:- Take the fish pieces and apply red chili powder, turmeric, mustard oil and salt on it and fry it. When the fish is cooked, just remove it from the oven. Keep the fishes in another dish.

Arindam: -uff, the smell of Dog Shark is not as good as the Indian fishes. Anyway, please carry on.

Sumitra: -Now pour mustard oil in the frying pan again and heat it up for 2 minutes. Add onion, black pepper, green chili and garlic powder, ginger and keep it at the frying pan to create a paste, until the onions become golden color. Put off the oven and mix the paste in that fried shark fish. Can you please break those 2 eggs and put it in that bowl?

Arindam: -Ya, already I have done that. Are you going to put those fried Dog Shark fishes in these egg yolks?

Sumitra: -You are very smart. Yes, indeed, I am doing that only. Fried Chilly Dog Shark fishes in the egg yolks. Now, pour the entire thing into the frying pan and fry it with mustard oil for 5 minutes, until it becomes brownish-yellow. Let me serve this Dog Shark item to you, by adding some capsicum, onion and lemon to it in the dish.

Arindam:- My goodness, it is so heavy. One piece is enough for me. The taste is good. I ate dog shark fish for the first time. The credit goes to Sumitra. Sumitra, Thanks a lot. Viewers, here we are ending this episode. Till then, take care and Good Bye.

FOODS (EPISODE - 06)

Arindam: -Good afternoon, viewers. Today, in this episode, we are not going to visit any restaurant, but rather we have visited the house of Mrs. Renuka Roy of Hyderabad, who works as a Food and Catering Consultant for a reputed 5-Star hotel in Hyderabad. Oh! Let me also tell you that, Mrs. Renuka Roy is basically from Amritsar. She fell in love with my maternal elder brother, Mr. Dibakar Roy, who works as a faculty in a reputed MBA Institution in Hyderabad. So, Renuka boudi, as a girl from Amritsar, how you managed to learn the Bengali dishes. I know, Punjabi and Haryana girls are also expert in cooking good North Indian dishes. Oh! Viewers, let me clarify one thing, that in Bengali, we refer our bhabhi as boudi. So, boudi means bhabhi in Bengali.

Mrs. Roy: -Uff, Devarji, you will never change. Jaisa tumhare bare bhaiye, waise uska chota bhai. From my childhood, I was fond of cooking, because I was myself a foodie person. I was 17 years old, when I started buying books on different kinds of dishes, and I used to try it in my small kitchen. The Bengali dishes, I learnt from my mother-in-law. He he he …at least I took 3 years after marriage, to get the comments from my hubby, that I can also cook Bengali foods like his mother. But, I never thought that exploring and experimenting new kind of dishes will become my profession. Actually, the owner of that 5-Star hotel is a good friend of my hubby. He offered me the job to take care of the Catering Department in his hotel. I usually, give tips and innovative ideas to customize the cooking of foods, as per the customers’ tastes and flavors.

Arindam: -Boudi, I and my whole unit is feeling very hungry now. Can you cook something for us? As our Sain Director is a Mohun Bagan supporter. So, he is requesting you to cook Chingri (Prawn) Malai Curry.

Mrs. Roy: -But, my hubby is an East Bengal supporter. So, his favorite dish is Hilsha Curry (Ilish Macher Jhol). So, let me cook it today.

Arindam: -Ha ha ha …ok, ok, not an issue. So, what are the ingredients for it?

Mrs. Roy: -I have taken 8 pieces of Hilsha fish, 2 Potatoes in 16 small pieces, 2 green Chilies cut in several tiny pieces, 3/4 spoon black jeera, some amount of garlic paste, salt, turmeric powder and mustard oil.

Arindam: -Ok, cook it quickly. I will eat this curry with rice.

Mrs. Roy:- Now, let me wash these pieces of fish in water. Fry the fishes, with mustard oil, and keep it aside.

Arindam: -Hmm, boudi, what a smell of these fishes. I am feeling hungry. Viewers, I am feeling very pity on you, as you people cannot smell it, he he he …anyway, just watch, what Renuka boudi is going to do next.

Mrs. Roy: -Now add the 3/4 spoon black jeera to the mustard oil, and let it boil for 1 minute. Then add some turmeric, green chilies, potatoes and salt. Then pour 2.5 glass of water to it. After 1 minute, add the fried fish to it. Keep it like that to boil for 10 minutes.

Arindam: -Hurrah, now the Hilsha curry is in front of me. I will eat it with the rice. Let me just taste it. Uff, baah baah, boudi, kya banaaya hai aapne, yeh dish…daarun laagche khete…

Mrs. Roy: -But the taste of this Hilsha fish is not so good. When his posting was in Kolkata, before the rainy season, we used to eat the Hisha fish of Padma River. The tastes of those fishes are really great. In Hyderabad, you will not get good quality Hisha fish.

Arindam: -Hmm…but, I am still liking this food. Viewers, try to cook this Hilsha curry once in your house, and eat it with rice. You can send me your feedbacks after eating that curry, in our email id: - Foods@RoyalBengalTigerTV.com. Anyway, thanks a lot, Renuka boudi. Viewers, see you again in the next episode.

FOODS (EPISODE - 01)

Arindam: - Good morning viewers, from today onwards, “ROYAL BENGAL TIGER TV Channel (RBTV)” is going to broadcast in front of you a special program “FOODS” under the banner of “ArindamSain Production”. So, just follow me. We are now in a very famous hotel of Milan. Let us visit the kitchen.

Donioli: - Good morning Sir, and welcome to our 5-Star hotel.

Arindam: - So, today, what are you going to cook.

Donioli: - I will tell you later, the name of the food. Just let me cook it.

Arindam: - So, what are the ingredients, that you are going to take?

Donioli: - Very simple ingredients. Some dried mushrooms, 2 chopped onions, 1 bowl of rice, chopped chicken livers, 1 tomato paste, 4 tomatoes, 2 diced eggs, 2 pieces of bread, butter, salt and frying oil.

Arindam: - Well, is it a Chicken curry?

Donioli: - No, not at all, something different from that.

Arindam: - Ok, let us see. So, what is the first step?

Donioli: - Cut the mushrooms and keep it aside in a bowl of warm water. Just put some onions in saucepan, and keep on cooking for 2 minutes with the frying oil. Add the bowl of rice now. Then add some butter to it. Now, a mixture will be made. Keep it in separate bowl.

Arindam: - You kept that mixture there, then what about the other ingredients?

Donioli: - Fry the chicken liver in the saucepan. Add butter, chopped onions, tomatoes and mushrooms to it. Add the diced eggs and bread crumbs to it. Cook for 5 minutes. Now, a mixture is created.

Arindam: - You created two mixtures, one is of the rice, and another of the chicken liver, mushrooms, egg and bread crumbs. Now, what are you going to do?

Donioli: - Take the mixture of rice in your palm, and then flatten it just like Indian parathas. Now, take 1 spoon of the other mixture and paste it on the mixture of rice. Now, close your palm, and form a ball, as if you are making a samosa.

Arindam: - Oh!, you have made a ball if rice, and inside that, there is the mixture of chicken liver, egg and bread crumbs. Great, now are you going to fry this ball?

Donioli: - of course, yes, I will fry it to make a pakora, but of different style. Just keep on frying, until the color of the ball, becomes brown or golden color. Now, let me serve this with tomato sauce. Taste it, Sir…

Arindam: - Wow, the taste is different, I think you have made a Chicken Pakora, but in Roman style.

Donioli: - This is known as fried Romano Rice Balls…It is different…isn’t it so?

Arindam: - Thanks a lot Donioli, our time is up. Thanks for sharing this recipe with us. Viewers, see you again. Take care and Good Bye…
